 Muffins with Bacon & Bleu d'Auvergne - Breakfast

Description:
The classic combination of bacon and blue cheese has never tasted so good! You can rustle up these muffins in no time at all, for breakfast, lunch or a snack.
Ingredients:
8 rashers of back bacon
4 English muffins
3 large tomatoes, sliced
75g/3oz Bleu d'Auvergne, sliced
Preparation:
Cook the bacon under a hot grill for 6-8 mins, turning once until crisp and golden on both sides. Set aside. Split the muffins in half and toast under the hot grill for 2 mins until golden. Top with the sliced tomatoes, bacon and blue cheese. Cook under the grill for a further 2 mins until the cheese has melted. Serve warm. |
