This one-pot supper is so easy to fix it’s hard to resist. Each steamy bowlful is swimming with good-for-you ingredients – omega-3 rich salmon, high-calcium cheese, and green peas, a great source of fiber and vitamin A.
8 ounces small elbow macaroni (about 2 cups)
One 6-ounce can skinless, boneless pink salmon, flaked
1 1/2 cup frozen green peas, thawed
2/3 cup reduced fat sour cream
2/3 cup preshredded reduced fat Cheddar cheese
1/3 cup grated Parmesan cheese
Cook pasta according to package directions. Drain and immediately return to the pan. Add the salmon, peas, sour cream, Cheddar cheese, and Parmesan cheese. Mix everything together, heat through, and serve.
